Vegan Flower-Powered Cheese Platter

Ingredients:

For the Vegan Cheese:

  • 2 cups of raw cashews, soaked in water for 4 hours
  • 1/2 cup of filtered water
  • 1/4 cup of nutritional yeast
  • 2 cloves of garlic, minced
  • 2 tablespoons of lemon juice
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of onion powder
  • 1/4 teaspoon of turmeric (for color)
  • Moroccan Flame edible flower petals -  for garnish

 

For Serving:

  • Assorted crackers and bread
  • Fresh fruit (grapes, berries, figs)
  • Nuts (almonds, walnuts, or your favourites)

Instructions:

1. Prepare the Vegan Cheese:
Drain and rinse the soaked cashews.
    • In a food processor, combine the soaked cashews, filtered water, nutritional yeast, minced garlic, lemon juice, sea salt, onion powder, and turmeric.
    • Blend until you have a smooth, creamy consistency. If the mixture is too thick, you can add a bit more water.
    • Taste the cheese and adjust the seasoning as needed, adding more lemon juice or salt if desired.
  1. Shape the Vegan Cheese:
    • Line a small round bowl or mold with plastic wrap, leaving some excess hanging over the edges.
    • Carefully spoon the vegan cheese mixture into the lined bowl, smoothing the top with a spatula.
    • Fold the excess plastic wrap over the top, covering the cheese completely.
    • Place the cheese mold in the refrigerator to set for at least 2 hours or until firm.
  2. Assemble the Platter:
    • Once the vegan cheese has set, carefully unmold it onto a serving platter.
    • Decorate the cheese with additional edible flowers, strategically placing them on top and around the platter.
    • Arrange an assortment of crackers, bread, fresh fruit, and nuts around the cheese, creating a colorful and inviting spread.
  3. Serve and Enjoy:
