· 2 slices sourdough bread
· 1 Avocado
· ½ Lime
· 1 cup Edamame
· Mint
· Extra virgin olive oil
· Salt & pepper
Directions
· Slice sourdough and toast it
· In a bowl smash avocado and mix it with half lime juice and 1 tablespoon olive oil.
· Scoop on to toast
· Add edamame, fresh mint leaves, salt & pepper and two or three dried
