This soup is packed with 70% of the daily recommended intake of vitamin C.
Heat the olive oil over medium high heat. Add all the chopped vegetables, a part from broccoli. Sauté until softened, about 10 minutes.
Add Broccoli, vegetable broth and almond milk. Simmer until bubbly and broccoli is bright green, about 5 minutes.
Blend the soup, just pulse a few times to mix everything. Return to pot; stir in nutritional yeast and salt. Taste, adjust and serve it!
How to make croutons
Heat 1/4 cup olive oil in a skillet over medium high heat. Add one smashed garlic clove and let it hang out (without browning it) for a few minutes. Add cubed bread (about 6 thick slices cut into chunks) and toss around in the pan until golden brown and crispy. Drain on paper towels. Season with salt.
Nutritional yeast adds this soup a yummy, salty, nutty, bacon flavor and some extra vitamins, too.
